My diet...

Because of the way my parents(dad especially) eat I do the best with what I've got. I've basically been living off tyson chicken tenders cooked in the oven, peanut butter granola bars and wild cherries from my neighbor's tree. How good for me are the chicken tenders compared to if we had the money to buy pieces of actual unprocessed chicken? Do I need to try to take the breading off?

I would highly recommend eating a more varied diet all together - as minimally processed as possible.  Making your own tenders is just as easy as making the preprepared ones when you learn how to make them and you don't need breading.  You should also learn some other dishes as well since an unvaried diet leaves you open to several deficiencies.
